I’ve never really had eggplant before. I was excited to pick this veggie for VTV this week. This week has been super crazy! I actually only cooked dinner 1 maybe 2 times this week. Tonight I found a yummy looking recipe and decided to make it right away.
This eggplant was alright.. it was kinda bland tasting though, so we put some marinara sauce, ricotta cheese, and shredded cheese ontop. It made it much better, almost like an individual eggplant parmesan.
