Two “healthy” meals in a row! I’m on a roll. 🙂
Last night we made tacos. We tried to make them healthier though. Before Christmas we would make tacos with the cheapest hamburger we could find and just put meat and cheese on the tacos. Usually we ate queso with it. But this time, we challenged ourselves to make it healthier.
We used 93/7 ground turkey meat and low sodium taco seasonings. We also chopped up lettuce and tomatoes, used 2% cheese and low fat sour cream. Instead of making queso to eat with it, we cooked some squash. (Sometimes, our sides don’t go with the meal, I kinda just cook what sounds good at the time. 🙂 ) John also wrapped his taco meat up in big pieces of lettuce (think lettuce wraps from P.F. Changs) and he loved it like that, said it was better in the lettuce then in the tortilla.
So, this may not be the “healthiest” meal ever, but it’s definetly an improvement on what we used to cook. Enjoy. 🙂
